CEP representatives taking part in upcoming Ag Day at the Capitol; Event set for March 22

Tuesday, January 30, 2018

The "most popular event under the Golden Dome" is set for March 22, as Gov. John Hickenlooper, state officials, the media and others will take part in a well-deserved "thank you" to Colorado's farmers, ranchers and agribusinesses during Agriculture Day at the Capitol. Each year, the event comes together with the help of Colorado Egg Producers (CEP) personnel.

CEP Industry Relations Manager David Collie -- pictured above on the right, and who also owns and operates Collie Consulting LLC -- takes the lead among the organizations that make up the Colorado Ag Council, to organize the event, while other CEP reps are also on hand each year to assist.

With nearly 1,000 people in attendance, the event is highlighted by a cook-off competition, featuring the teaming up of local chefs, lawmakers and ag representatives, creating dishes with Colorado-grown foods.

Denver chef appreciates the egg as much as a parent as he does a culinarian

In spreading the good word about eggs as World Egg Day (Oct. 13) rolls around this year, one might expect me – as a chef – to approach the topic from a culinary point of view. I will most definitely make a little time do so later in this piece, but before that, I’m going to detail my appreciation and love for the egg from another perspective; that of a time-crunched parent.

It’s tough to think of another food that provides the all-around health portfolio that eggs bring to the table, and yet also comes in an abundance and diversity of simple, quick recipes. There are 2-minute methods to whipping up various dishes, such as an egg-sausage-cheese breakfast bowl – a pretty efficient way to send your kid out the door for school. Egg sandwiches make a perfect, snappy and hearty lunch on the weekends, and the good ole’ hard-boiled egg is a heck of a substitute for a sugary snack any day of the week.

During my 35-plus years of fueling athletes, I’ve had the pleasure of working with every level of sports, from the developmental program for USA Hockey, to the collegiate ranks, and with all of the professional leagues.

My name is Dave Ellis, and I'm a veteran sports registered dietitian who lives in Colorado Springs and travels coast-to-coast implementing high-performance fueling solutions for some of most progressive teams in the U.S.

While the needs of athletes change over the course of their careers, there is one common dietary thread I’ve witnessed; eggs. And what better time to draw attention to this icon of clean eating and its rightful place at the table of healthy living than on World Egg Day (Oct. 13).
