Eggs are Now Naturally Lower in Cholesterol

A new study shows large eggs are 14 percent lower in cholesterol and 64 percent higher in vitamin D. The United States Department of Agriculture's Agricultural Research Service (USDA-ARS) recently reviewed the nutrient composition of standard large eggs, and results show the average amount of cholesterol in one large egg is 185 mg, 14 percent lower than previously recorded. The analysis also revealed that large eggs now contain 41 IU of vitamin D, an increase of 64 percent.

Enjoying an egg a day can fall within current cholesterol guidelines, particularly if individuals opt for low-cholesterol foods throughout the day. The 2010 Dietary Guidelines for Americans suggest that eating one whole egg per day does not result in increased blood cholesterol levels and recommend that individuals consume, on average, less than 300 mg of cholesterol per day. The new 2010 Dietary Guidelines for Americans - released on January 31, 2010 - focus on balancing calories with physical activity, and encourage Americans to consume more healthy foods like vegetables, fruits, whole grains, fat-free and low-fat dairy products as well as seafood and eggs, and to consume less sodium, saturated and trans fats, added sugars and refined grains.

The guidelines consists of 23 key recommendations. Colorado Egg Producers are pleased to report that eggs are included on the list of foods and nutrients to increase. According to the guidelines, Americans are encouraged to choose a variety of protein foods, which include seafood, lean meat and poultry, eggs, beans and peas, soy products, and unsalted nuts and seeds.
