Colorado Farmers Donate 300,000 Eggs in Time for Easter

As children across America dip white-shelled eggs into vinegar-and-dye tubs, a group of Colorado egg producers has donated hundreds of thousands of eggs to that state's hungriest residents.

The Colorado Egg Producers Association, a coalition of seven egg farms, has given more than 300,000 eggs to four Colorado food banks. This Easter marks the fourth annual egg-giving.

"As egg farmers, we feel it is important for us to provide eggs year round, especially during these tough economic times," CEP's Jerry Wilkins said in a press release.

"At two eggs per person, our donation will help put high quality, wholesome and fresh eggs on the plates of more than 150,000 Coloradans this Easter."

The Food Bank of the Rockies, one of the beneficiaries of the egg largess, hosted the CEP and the Easter Bunny at a celebratory event Tuesday. CEP members cooked omelets for the crowd.

As Colorado Egg Producer Association members, Hickman's family farms sent 240 cases of eggs to the Western Slope Food Bank of the Rockies just in time for Easter. That's more than 43-thousand eggs! The food bank says they're feeding 37-thousand people a month on the Western slope, and almost half of them are children.

The seven local farms that make up the Colorado Egg Producers (CEP) Association donated more than 300,000 eggs to food banks throughout Colorado. Of that, 194,000 eggs were delivered to the Food Bank of the Rockies today to ensure that those in need will have eggs in time for Easter.

More than 50 children from a local daycare center and partner hunger-relief agencies were treated to a special visit from the Easter Bunny, and all of the children, volunteers and organizations in attendance were served a free omelet breakfast.

This was the fourth year in a row that Colorado Egg Producers and Feeding Colorado teamed up to help the more than 600,000 people who are at risk of hunger in Colorado. To read more, click here.

Each month, the Colorado Department of Agriculture features a different commodity to highlight the variety and quality of products grown, raised or processed in the state. This month, Colorado eggs are featured in our Breakfast Egg Tacos recipe.

Colorado's 3.8 million chickens produce more than one billion eggs every year. When selecting eggs, shell and yolk color may vary, but color does not affect egg quality, flavor, nutritive value, cooking characteristics or shell thickness. Protein-rich and lower in cholesterol than previously thought, eggs contain vitamins and minerals such as folate, choline and Vitamins A, B12 and D. Look for Colorado eggs at local grocery stores and at restaurants across the state.
