Beyond breakfast: Eggs for lunch, dinner, snacks and more

DENVER - June 2014 - With the protein and nutrients they provide, it’s no wonder eggs are a go-to breakfast food for many people around the world. Eggs provide the long-lasting energy needed to keep people going strong until lunch. And with so many ways to cook them – scrambled, hardboiled, fried, sunny side up – it’s easy to see why so many choose to start their day with eggs. But did you know that eggs could be a healthy, tasty option any time of day? With fewer calories, trans fats and sugars than your typical junk food snacks and fast food meals, the Colorado Egg Producers (CEP) Association wants you to know that eggs are a nutritious alternative for many of your daily meals.

“Eggs are extremely versatile to cook with, making it easy to work them into lunch, dinner and everything in between,” said Dave Turunjian, a Colorado egg farmer and member of CEP. “Though many view eggs as strictly a breakfast food, eggs can add high quality protein and essential vitamins, with minimal calories, to your other meals as well.”
