September marks the beginning of fall, bringing with it cooler temperatures, changing leaves and a new school year. Whether your child is starting kindergarten or high school, all students need a healthy, hearty breakfast to start their day. Packed with protein, vitamins and nutrients, eggs are a healthy and delicious breakfast choice to keep your child energized and engaged until the last bell rings. Help your child crack open their textbooks by cracking open a few eggs each morning. The Colorado Egg Producers (CEP) Association is proud to offer easy, healthy and kid-friendly breakfast recipes to help you, and your child, get the school day started.
“The start of the school year can be a hectic time for Colorado families. But that doesn’t mean we should forget about nutrition,” said Derek Yancey, Colorado egg farmer and CEP member. “Eggs provide growing kids with important nutrients and vitamins to keep their brains and their bodies strong. Eggs are also one of the most versatile foods. Whether your family enjoys a sit-down breakfast or breakfast-on-the-go, eggs can easily fit into your morning routine. Eggs are also a great option for healthy snacks and meals in schools, according to new guidelines recently issued by the USDA Food and Nutrition Service under its Smart Snacks Rule.”
Think you have no time for an egg breakfast in the middle of a busy weekday morning? Think again. You can prepare an egg breakfast in a snap. CEP and the American Egg Board recommend trying these fast, easy recipes.
Cereal Bowl Egg & Cheese Breakfast Burrito
1 flour tortilla (6-inch)
1 tbsp. shredded Mexican cheese blend
1 tbsp. salsa
Line a two-cup microwave-safe cereal bowl with a paper towel. Press a tortilla into bowl. Break an egg into center of tortilla. Beat the egg gently with a fork until blended, being careful not to tear tortilla. Microwave on high 30 seconds and stir. Microwave again until egg is almost set, 15 to 30 seconds longer. Remove the tortilla with paper towel liner from the bowl and transfer it to flat surface. Top the egg with cheese and salsa. Fold the bottom of tortilla over egg, then fold in sides. Note: Microwave ovens vary; therefore cooking times may need to be adjusted.
Microwave Coffee Cup Scramble
2 tablespoons milk
2 tablespoons shredded cheese
Salt and pepper
Coat a 12-oz. microwave-safe coffee mug with cooking spray. Add eggs and milk then beat until blended. Microwave on high for 45 seconds then stir. Microwave again until eggs are almost set (30 to 45 seconds longer). Top with cheese and season with salt and pepper.
In addition to providing Colorado students with a delicious, healthy breakfast, CEP wants them to learn about our state’s agriculture. Administered by the Colorado Foundation for Agriculture, the Agriculture in the Classroom program provides Colorado educators with fun, free resources for their students, including activity books, posters and new interactive Colorado Readers that cover Colorado’s food system, agriculture, natural resources and nutrition. The online interactive format uses quizzing and other activities to reinforce learning. The Colorado Egg Reader is full of information about eggs and chickens. Students will learn about the parts of an egg, the different housing systems and the various types of eggs that are produced using these systems.
